『パルフェビジュー®︎ モンブラン』

山梨の若きパティシエが、苺をシブーストで包み、ショートケーキのトップに飾った。

その発想へのオマージュとして、私は栗のソルベをシブーストで包み、パルフェビジュー®︎のトップへ。

何かを、何かで包む。

そこには、ひとつの物語が始まる予感がある。

それが、今回のパフェの始まりでした。

これまで等々力で力を蓄えてきたパティシエが、さらに腕を磨くため、甲州市の神金へ旅立った。

慣れ親しんだ場所を離れ、新しい土地へ向かうことを決めた、その覚悟。

この一皿には、そんなパティシエへのリスペクトも包んでいます。

"Parfait Bijou® Mont Blanc”

A young pastry chef in Yamanashi once wrapped a strawberry in chiboust and placed it atop a shortcake.

As an homage to that idea, I wrapped chestnut sorbet in chiboust and placed it atop this Parfait Bijou®.

To wrap one thing in another—it felt like the beginning of a story.

After honing his craft at Todoroki, the pastry chef set off for Kamikanem, Koshu City, to further refine his skills.

This parfait carries my respect for his decision to leave a familiar place behind and take on a new challenge.
